Recipe of the week: creamy gnocchi with sun-dried tomatoes and spinach

  • Gnocchi 600 g
  • Spinach 200 g
  • Dried tomatoes 60 g
  • Button mushrooms 500 g
  • Liquid cream 200 ml
  • parmesan shavings 60 g

Recipe

Start by washing the spinach. Then cut the dried tomatoes into pieces and remove the earthy ends from the mushrooms and chop them. Heat a pan over medium heat with a knob of butter or a drizzle of olive oil. Fry the gnocchi for about 4 minutes and mix well.

When the mushrooms are soft, reduce the heat to low. Add sun-dried tomatoes, cover with cream and bring to a boil. Serve the creamy gnocchi sprinkled with parmesan shavings.
